Executive Chef Alex Grenier, in collaboration with Founding Chef Alex Seidel, leads this exciting new chapter, promising a "love letter" to Denver's vibrant food community. The redesigned interior, led by Sage Studio, enhances the dining experience with improved lighting, acoustics, and additional seating, including a revamped private dining room.
Building on its farm-to-table legacy, Mercantile's new menu emphasizes seasonal ingredients and collaborations with local purveyors. The lunch service now offers both a casual café counter and an elevated $35 prix fixe dining room experience. Dinner features shareable plates categorized by Earth, Sea, Grain, and Pasture, showcasing Colorado's bounty. The bar program boasts a curated wine list and a "build-your-own" gin and tonic service, alongside a large-format seasonal sangria.
Mercantile remains committed to its home city of Denver and the downtown community, sourcing ingredients from local favorites like Brunson Meat Co. and Rebel Bread. The restaurant will continue hosting events celebrating local farmers and producers.
With these renovations and menu enhancements, Mercantile is poised to enter a new era, offering a spectrum of dining experiences—from quick café lunches and lively bar gatherings to intimate private dinners and memorable dining room moments. The reimagined space further cements its reputation as a cornerstone of Denver's ever-evolving dining scene.
Starting Friday, February 21, Mercantile will be open Monday through Saturday for lunch from 11 a.m.-2 p.m., happy hour from 2-5 p.m. (in the café only), and dinner from 5-9 p.m. Reservations are now available on the Mercantile website.
