Mercantile Exterior

Mercantile, the restaurant by James Beard Award Winner Chef Alex Seidel in Denver’s Union Station, will be joining the impressive roster of more than 50 restaurants, bars and entertainment venues under Sage Restaurant Concepts. Mercantile will be an owned restaurant concept for Sage, alongside brands such as Urban Farmer and Departure, with plans to strategically grow the brand in partnership with Chef Seidel.

“Mercantile showcases the best of downtown Denver hospitality,” said Daniel del Olmo, president of Sage Hospitality Group. “Since its inception, Chef Seidel and his team have consistently delivered outstanding service, innovative menus and an exceptional guest experience. We are very excited to work closely with him to thoughtfully re-launch the Denver Union Station location, grow the Mercantile brand and develop new concepts together.”

Chef Seidel and his team, currently led by Executive Chef Alex Grenier, have established the restaurant as one of the best in Denver, with elevated service and creative dishes that change with the seasons. Known for its focus on classic comfort food with a modern spin, Mercantile has consistently been recognized as one of the best restaurants in Denver, most recently receiving a “Recommended” listing in the 2023 Colorado Michelin Guide. A handsome space with wood tables, high ceilings, plush banquettes, and ample natural lighting, Mercantile is a lively destination for lunch and dinner. With room for 108 guests across the dining room, chef’s counter bar, outdoor seating and marketplace, the restaurant is also home to a semi-private wine room that can host events and celebrations.
